Zoodles and Meatballs

Ingredients

Chicken meatballs (I love these: https://www.wellplated.com/baked-chicken-meatballs/)
2 TBSP Extra virgin olive oil
½ cup Red onions, diced
6 Cloves Garlic, minced
6 8 oz. Zucchinis, cut into long julienne strips (with a mandolin or spiralizer) – or buy spiralized zoodles in the produce sections of your store
Salt & pepper, to taste

Steps

  1. Heat a large nonstick skillet over medium heat.
  2. When hot add the oil, onions, and garlic and cook until fragrant, about 1 to 2 minutes.
  3. Increase heat to medium-high and add the zucchini, season with salt and pepper to
  4. Taste and cook about 1 minute.
  5. Give it a stir to mix everything around and cook another 1 to 1-1/2 minutes, or until the vegetables are cooked through yet firm.
  6. Top with warm meatballs.
