Turmeric Roasted Vegetables

Ingredients

¼ Cup Avocado oil or olive oil
2 Large cloves Garlic, minced
2 TBSP Fresh lemon juice
1 TBSP Turmeric (I add a little less. Experiment to see what you like!)
1 tsp sea salt, plus more to taste
1 Large head Cauliflower chopped into florets
4 Medium Yukon Gold Potatoes, diced
10 Oz. Fresh green beans, trimmed and cut in half
1 tsp Lemon pepper

Steps

  1. Preheat your oven to 375 degrees.
  2. In a small bowl, whish together oil, garlic, lemon juice, turmeric, and sea salt.
  3. Place sauce in a larger container of Ziplock bag, add veggies and shake to coat.
  4. Spread over a large baking sheet.
  5. Add additional salt and lemon pepper.
  6. Bake for 40-45 minutes (depending on oven). Veggies should be nice and golden brown, crispy on the edges.
