Massaged Kale Salad


1 Large bag Kale leaves, shredded
1 Avocado, diced
1 Red pepper, diced
1 small Cucumber
4 Scallions, sliced
4 tsp Lemon juice
4 tsp Olive oil
Salt, lightly


  1. Place the shredded kale in a large mixing bowl.
  2. Add olive oil and lemon juice.
  3. Toss gently by hand, massaging the kale to tenderize and incorporate the marinade.
  4. Add half of the avocado and continue massaging to make a creamy dressing.
  5. Continuing to toss, add remaining half of diced avocado, red pepper, cucumber, and scallion. Season lightly with salt and pepper.
  6. Serve immediately.
