Preheat oven to 450 degrees F.
In a large bowl, mix together the olive oil, Dijon mustard, curry powder, cumin, and herbs de provence.
Add cauliflower to bowl and toss until it is well coated. Roast for about 20 minutes, until they’re golden and tender.
